Sweet potatoes are BY FAR, one of my absolute FAVORITE things to eat for many reasons…lots of vitamins, healthy complex carbohydrates that fuel your workouts (aka feel good fuel), but mostly because they TASTE SO GOOD!  I can eat them in ANY way, shape or form.  My kids LOVE pancakes.  So here is a SUPER easy way to start your day off with them and give your kids something nutritious to eat…

SUPER Easy Sweet Potato Pancakes

  • ½ cup mashed sweet potato
  • 2 eggs
  • coconut oil or ghee for cooking
  • 1 t vanilla extract (optional)
  • ¾ teaspoon ground cinnamon (optional)
  • pinch of ground ginger (optional)
  • pinch of allspice (optional)
  • pinch of salt (optional)

Bled 2 ingredients in a blender and then add spices.  Heat coconut oil or ghee on a griddle and cook cakes for about 3 – 5 minutes each side flipping when bubbles begin to form.  Enjoy!
